GREEN Hospitality will host a complimentary Food Waste Masterclass at HOFEX 2025, exclusively for F&B professionals. This masterclass aims to raise awareness and foster creative approaches to managing and repurposing food waste within Hong Kong’s vibrant hospitality industry.

Hong Kong faces a significant food waste challenge, generating a staggering 3,437 tonnes daily – representing 30% of the city’s general waste. This issue is especially crucial for the hospitality industry which contributes 778 tonnes of food waste daily.

This masterclass offers a proactive approach to tackling this challenge. Attendees will learn how to transform food scraps into culinary assets, gain practical strategies to minimise food waste in their daily operations and share insights with industry peers while exploring innovative solutions.

● Dealing with Potential and Actual Food Waste & Food Waste Audit

We’re empowering the hospitality industry to make a real difference.

This event coincides with the launch of the third iteration of the pioneering “Food Waste to Good Taste” impact project, initiated by The University of Hong Kong, School of Biological Sciences. It aims to reduce food waste by showcasing the potential of often overlooked food scraps that still hold nutritional value through a series of interviews and recipes by top Hong Kong chefs, culminating in an Asian-inspired cookbook.

GREEN Hospitality 將在HOFEX 2025展會期間,為餐飲業專業人士提供免費廚餘管理大師班。此課程旨在提升業界對廚餘問題的關注,並引導香港蓬勃發展的酒店業探索創新的廚餘管理及再利用方案。

香港正面臨著嚴峻的廚餘危機,每日產生高達3,437噸廚餘,佔全市一般廢物的30%。這個問題對於酒店業來說十分重要,尤其該行業每天平均產生778噸廚餘。

這個大師班將為業界提供一套全面的廚餘管理方案。參加者將學習如何將廚餘轉化為具價值的烹飪資源,並學習在日常運營中有效減少廚餘的實用策略。課程亦提供寶貴的交流平台,讓業界同業分享經驗,共同探索創新的永續發展方案。

Lucia Loposova

Lucia Loposova is a sustainability professional and educator with over 13 years of experience. Originally hailing from Slovakia, Lucia has lived and worked in various countries across Asia since 2013 and currently calls Hong Kong home. She has been passionate and involved in many aspects of Sustainable Development through her work and volunteering in social enterprises and NGOs before she founded GREEN Hospitality in 2021. As the Executive Director of GREEN Hospitality, she has led numerous projects and initiatives ranging from sustainability strategy development to capacity-building and training as well as innovation sprints to find solutions for the sustainability challenges in the hospitality industry. Lucia has extensive experience working with hotels, restaurants, start-ups, and hospitality industry supply chains when it comes to the implementation of sustainable business practices related to topics such as waste reduction, responsible procurement, sustainable food systems, youth empowerment, water conservation, and carbon footprint to name just a few. She has been working closely with industry organizations, academia, and the government to develop actions that promote sustainable tourism and the vision of net-positive hospitality.
