Italian Pavilion @ HOFEX

Despite the unfavourable travel conditions amid the pandemic, Italian Trade Commission (ITA- Hong Kong) will be present at the Italian Pavilion in HOFEX 2021 in a hybrid way: Italian products can be physically showcased with the assistance of their local representatives, while the Italian exhibitors can also be reached virtually through the Digital Business Matching platform.

In the 2021 edition, the Italian Pavilion will host 18 Italian exhibitors, who are showcasing various Italian food specialties, ranging from cold cuts, cheese, olive oil, truffle, condiments, beverages and more! Besides, there is also a demonstration area where live chef demonstrations take place during the 3 days of fair (7 – 9 September).

Live Demonstration

For the demonstration, ITA is honoured to invite Mr. Paolo Monti, a well-known Italian chef in town who is currently the Executive Chef in Gaia Group. He will demonstrate the delicacy of Italian cheese and salumi products certified by the European Union through a series of geographical indications that include PDO (Protected designation of Origin) and PGI (Protected Geographic Origin).

PDO (in Italian DOP) is awarded to products of excellence that express a close tie to its territory of origin. The PDO recognizes agricultural products and foodstuffs which are produced, processed and prepared in a given geographical area recognizing production methods.

PGI (in Italian IGP) is awarded to agricultural products and foodstuffs closely linked to the geographical area. At least one of the stages of production, processing or preparation takes place in the area.

The demonstrations cover 3 categories of PDO cheese suchas Grana Padano DOP, Pecorino Toscano DOP and Mozzarella di Bufala Campana DOP and a variety of Salumi, including Bresaola Valtellina IGP, Prosciutto Cotto, Salame Milano, Salame Felino and Salame Cacciatore. During the chef presentation, visitors will understand how to create simple and easy dishes with the authentic Italian cheese and cold cuts in the blink of an eye.

About Chef Paolo Monti

Paolo Monti - Gaia Group Executive Chef

Chef Paolo Monti heads the kitchen at Gaia since its opening two decades ago with a fresh and thoroughly modern style of Italian cooking.

A native of Rome –the source of his classical training and experience— Paolo has worked at some of The Eternal City’s most renowned restaurants, including Alberto Ciarla, the famous seafood venue; the Michelin-star Eden Hotel, one of the capital’s most distinguished and historic hotels with a sublime terrace overlooking Via Veneto; and Checcoar 13 ‘mo, one of the oldest trattoria in Rome.

Paolo also draws on seven years of experience with a number of leading Los Angeles restaurants, notably as sous chef to the legendary Mauro Vincenti at the famous REX il Ristorante, Louise’s Trattoria and the Alto Palato Trattoria, ranked among the Top 10 restaurants in LA.
